Avocados; natures pre-packaged rounds of health. Beneath their alligator skin, the flesh of these fruits is loaded with healthy fats and contains lots of good stuff such as fiber, vitamin K, folate, pantothenic acid, vitamin B6, vitamin C, and lots of potassium. They can take part in savory dishes as well as sweet ones. For the avocado fanatics, all that is required is a spoon and maybe a pinch of salt. For the ones who aren’t so crazy about avocados, but still want to reap the benefits they selflessly offer, there is mousse. Delicious, creamy, chocolatey mousse.

The strong flavor of the cacao powder does a fantastic job covering up the distinct taste of avocado. Not that avocados taste bad at all, but, if you are worried that your dessert might confuse your taste buds, don’t be.

The recipe below provides the ratio of ingredients to one big avocado. This recipe makes 2 servings. You can easily multiply the ingredients with the number of avocados you’re using. You can’t really go wrong. Just taste the mousse as you’re preparing it to see what’s missing.

Avocado Chocolate Mousse

Makes 2 servings.

  • 1 big avocado
  • 2 tablespoons – coconut oil, melted
  • 1-2 tablespoons – unpasteurized honey
  • 2 tablespoons – raw cacao powder
  • 2 tablespoons – coconut milk
  • 1 teaspoon – vanilla extract
  • a pinch of sea salt
  1. Skin avocado(s) and place in the food processor. Process until it’s creamy and you see no big chunks.
  2. Add in coconut oil + honey + cocoa powder + coconut milk + vanilla extract + pinch salt. Process until all ingredients are combined.
  3. Taste. If it doesn’t taste to your liking, add more cacao or honey or milk (for a lighter, creamier mousse) as desired.
  4. Place mousse in ramekins and if you fancy, sprinkle with coconut flakes. Cover and refrigerate for at least 2 hours before eating.

The mousse keeps in the fridge for 2 days. 3 maximum.
